Mardin Terebinth Coffee

Terebinth coffee or Kurdish coffee; is a kind of hot drink obtained by drying and grinding terebinth, a type of wild pistachio, and cooking it like regular coffee. Has been present in Kurdish, Turkish, and Iranian cuisines for thousands of years. Although its name is "Terebinth Coffee", it is not produced from the coffee plant beans we know, since it does not contain any coffee plants. For this reason, it is a utterly caffeine-free option.

Terebinth tree is a plant species native to the Mesopotamian region. Grows in the southern regions of Turkey, in Iran, and in the north of Iraq.

Terebinth coffee has an earthy and wonderful flavor reminiscent of pistachio. Has a milder flavor than regular Turkish coffee. For this reason, those who find Turkish coffee too strong can prefer terebinth coffee.

Terebinth coffee is cooked in a coffee pot and served in a small cup, just like Turkish coffee.

How to brew?

1 ADD COFFEE

Put 1 dessert spoon of terebinth coffee per person in the coffee pot.

2 ADD WATER OR MILK

Add a cup of water per person and mix well.

3 ADD SUGAR (OPTIONAL)

Take the coffee pot and start cooking without stirring.

4 MIX WELL

When the coffee starts to froth, immediately remove it from the heat before it overflows, and share the foamy part into the cups.

5 COOK ON LOW HEAT

Then, if you wish, take the coffee back to the stove and allow it to rise a little more.

6 POUR INTO CUPS

Finally, share the coffee left in the coffee pot into the cups.
